
The cutest little puffin met us at the door (well...sorta) to set the tone for our Around the World Potluck's trip to Iceland!
Lisa kicked things off with some real, live, authentic Iceland wine....

Wendy had set a beautiful table for us too....

Our appetizer was Icelandic Crab dip prepared by Robin - this was so good I wanted to kidnap the leftovers, but my good manners kicked in just in time.
Seriously - this was amazing and I will definitely make this for company. Recipe HERE if you want to try it.

Then came Wendy's main dish - chicken wrapped in the most flaky pie crust - soooooo good!

Betsy prepared a delicious curry potato salad with pieces of apple - yummy! Recipe HERE

Diane brought a vegetable medley...

And of course a hearty Icelandic bread rounded off the meal...

Icelandic cuisine has a long history. Important parts of Icelandic cuisine are lamb, dairy, and fish, due to Iceland's proximity to the ocean. Popular foods in Iceland include skyr, hangikjöt (smoked lamb), kleinur,laufabrauð and bollur. Much of the taste of this traditional country food is determined by the preservation methods used; pickling in fermented whey or brine, drying and smoking.
