Around the World Potluck: Mexico




HOLA!

We're visiting Mexico this month at my Around The World Potluck club!

Course ya gotta start things off with a margarita and a yummy appetizer:




(Those are Mexican Egg rolls, prepared by Betsy.  YUMMY!  Recipe HERE if you want to give them a try.




Shelly prepared a wonderful Mexican Caesar salad.  With Cilantro Pepita dressing, pepitas and tortilla chips as garnish.  Oh and I think there was lettuce in there too.   (HERE is a similar recipe)



Our most delicious main dish was Robin's chicken and cheese enchiladas -- Muy Bien!




Here is her recipe in case you want to try these:

Robin's Enchiladas- approx 8

1/4 cup Onion saute'd in olive oil
Add diced chicken - 3 or 4 cups, one container or Philly cooking cream,
1/2 small can green chilis and 1 cup cheese.
Mix together over low heat in skillet.
Scoop about 1/3 of mixture into flour tortilla, roll up.
Put the seam down on baking dish sprayed with cooking spray.
Top with enchilada sauce and more cheese.

Oven at 350 bake for 15-20 minutes or till hot and cheese is melted!!




Course some spanish rice and fresh flour tortillas were yummy too.


Then came Wendy's Sopapailla Cheesecake

(She said it was easy - so here's the recipe for you) 
2 pkgs cream cheese
1 cup sugar
1 tsp vanilla
2 cans crescent rolls
3/4 cup sugar
1/2 cup softened butter
1 tsp cinnamon
1/4 cup honey

Spray a 9 by 13 baking dish and preheat oven to 350.
Cream the cup of sugar, cream cheese and vanilla.
Roll out one package of rolls into the baking dish.  Add the mixture on top.
Add the other package of rolls on top of the mixture
Mix together the butter, cinnamon and sugar and dot the top layer of rolls with that.
Bake for 30 minutes.
Add whipped cream and drizzle with honey and serve.

The Wedding of Stephanie & Isaac: Celebrate! (San Diego Wedding and Engagement Photographer)

Toasts are such a fun part of the receptions.  A little bit funny, a little bit touching, and a whole lotta wonderful!







But then it was time for cake.

YUMMY cake.  (Well, I didn't try any, but I recognized the bakery so I KNOW it was YUMMY!)







Such a fun and beautiful day!  Stephanie and Isaac, thank you for trusting your memories to me!

The Wedding of Stephanie & Isaac: Dancin' (San Diego Wedding and Engagement Photographer)



The fun continued on the dance floor.

The bride and groom started the dancing and then invited everyone to join them on the dance floor.



And they were swept off their feet by their close friends for a rousing dance.  What a hoot!






And then, since we were all gathered around the dance floor, we had arranged for the DJ to invite EVERYONE out on the floor for a whole group portrait.

(I've been wanting to try this for ages -- I was so glad Stephanie and Isaac thought it would be fun!)




I brought along my step ladder and wide angle lens...........

After I made sure they were all having a laugh or two, I snapped that portrait.

Then since everyone was there, we tried one waving too.

(Geez I would love to have a portrait like this from my wedding 25 years ago!  How bout you?)

The Wedding of Stephanie & Isaac: The Reception (San Diego Wedding and Engagement Photographer)

The bride and groom and I work out a timeline for their wedding day in advance.  So we know exactly where we need to be at all times.

We had allowed ourselves about 20 minutes for romantic portraits- then it was time for me to zip inside the
reception room to await the grand entrance.



The first 15 minutes was spent hugging, loving, reuniting and just enjoying family and friends.



My goal is to document everything -- every hug, every smile, every detail!




From the table decor to the guest book (which was actually the most beautiful tree of wishes!





Then it was time for a lovely luncheon.

We moved quickly through the family portraits so the family could head into the reception.....

While the bride, groom and I stole away for some ROMANTICS.



We were lucky enough to be in a beautiful setting on Coronado Island.



I love this time of capturing the love of the bride and groom.

Then we headed up for some balcony portraits.......

The Wedding of Stephanie and Isaac: Getting Ready San Diego Wedding and Engagement Photographer



Stephanie and Isaac are married!

Yes, I said "married."

Let me explain:  they eloped to Jamaica in December (pretty romantic huh?)

But their family really wanted a celebration so they decided to have a wedding reception here in San Diego!



So they gave me a call to capture the memories.
 
(Too bad they couldn't fit me in their suitcase when they eloped! Cuz I'd LOVE to do a wedding on the beach at sunset in Jamaica!)








We started with all the getting ready portraits.






I'm IN LOVE with this next portrait of Stephanie, her mom and her sister.
