Prickly Pear Cactus

Photobucket Also known as nopal cactus and Indian fig, it thrives in dry, rocky poor soil with little care. Photobucket The cactus is also a food source. The fruits (those roundish buds) are sweet, juicy and nutritious and the pads (the flat beaver-tale shaped parts) are cooked and eaten as a vegetable. Photobucket Aren't the flowers gorgeous? 16 Years Ago Today

Guess what I was doing 16 years ago today... ? Come on, GUESS! Okay, here's a clue: Photobucket Raise your hand if you guessed correctly! In honor of Matt's 16th birthday, I'm going to post 16 pictures of him growing up. (And yes, I'm allowed to do weird things like that, because I make all the rules around here. Miraculous Peanut Butter Cookies

Need a quick treat? How about some cookies? Even better, how about some MIRACULOUS Peanut Butter Cookies? Bet you are wondering why they are miraculous, aren't you? Because they have just THREE ingredients! Ready? Okay - here goes: 1 egg 1 cup Sugar 1 cup Peanut Butter. That's it! (Yep - I'm not kidding you - that's it!) Photobucket Now mix it together and drop it by tablespoonsful on a cookie sheet: Photobucket Press it lightly with a fork for those wonderful criss-crosses. (Why DO we criss cross peanut butter cookies anyway? Anyone know???) Photobucket Bake for 16 minutes at 325 degrees. Photobucket Cool and eat! Like an Egg Cracked in a Frying Pan

Photobucket Spotted this beautiful wildflower on a walk around Mission San Luis Rey. I didn't recognize it, so I emailed my photos to Grammy and Pop-Pop for identification (they are my resource for all things flora, fauna and bird!) Well, a few minutes later, up pops their reply: Coulter's Matilija Poppy They also gave me a link for more info. That website described the flower as spreading out like an egg cracked in a frying pan. Isn't that just a PERFECT description? Photobucket The flowers are about 6 inches in diameter and consist of six crinkled white petals surround the sunny-side-up yellow center of multiple stamens. Photobucket This extraordinary plant will begin creeping underground -(kind of scary huh?)- soon you will have a HUGE colony that can spread well beyond the parent plant. ...and I'll tell you that's the truth, because the plant I saw was 5 feet tall and 15 feet wide! Mission San Luis Rey

Photobucket California has 21 missions. This beautiful building is Mission San Luis Rey de Francia- it was founded in 1798. (Don't we all hope we look that good when we are 211 years old?) Photobucket Since 1798, these peaceful and tranquil grounds have been entrusted to the loving care of the Franciscan Friars. We were on the mission grounds to see the Indian Pow wow, so we didn't really have time to visit the mission, but we did take a few minutes to walk through the beautiful grounds and peak at the cemetery. Photobucket Many of San Diego's leading pioneers and families are buried here. It has the visual effect of heightening the building. An espadaña is roughly triangular in shape but with graceful curved or scalloped edges. A Little Shopping

In between watching the dancers at the Indian Pow wow (see yesterday's blog for THAT) We wandered over to browse through the vendor village. And let me tell you, this was not your ORDINARY shopping mall! NO SIR-EE! This was mighty different!
